#diningwithtara #selfisolation VEGAN Orange Chocolate Bars│MEAL PREP Friendly BREAKFAST Bars│LOCK-DOWN Easy Recipe With everything that is going on in the world today, I thought we would make some easy and super delicious bars that are great for breakfast, dessert - or for any reason whatsoever! This recipe uses simple pantry and fridge staples and is easily customizable. They are gluten-free, vegan and low carb - but don't let that fool you! They are ridiculously good and PERFECT for meal prepping! They freeze beautifully. In fact, I store them in the freezer and whenever I want a delicious bar or two, I take them out about 5-10 minutes beforehand and they are perfect! If you don't have any clementines or oranges, you can easily use either a different fruit or you can use your favorite jam and they will still be delicious! Feel free to customize these bars for your preference. I use tapioca flour, but if you are low carb - simply use more almond flour or another type of nut flour. If you are not grain free - go ahead and add some rolled oats to the topping! I use coconut oil because it provides a buttery flavor and texture - and I love the added health benefits. But - if you only have butter, and are not vegan, go ahead and use melted butter instead! Let me know in the comments a recipe you would love to see created. Preheat oven to 375F. Combine base ingredients in a food processor and pulse to form a semi-crumbly mixture. Grease a 9x9 baking pan (may use an 8x8) with coconut oil. Line with parchment paper. Grease parchment paper. Reserve 1/4 cup of the mixture (for the topping) and press firmly into the bottom of the pan. Bake for 10 minutes. 2. Zest remaining 2 clementines and then peel. Add wedges and zest to a small saucepan over medium heat. Add remaining filling ingredients. Simmer until clementines begin to break down. Combine slurry ingredients and add to the pan. Stir for 30 seconds. Remove from heat and pulse in a food processor or immersion blender until smooth (optional but recommended). Remove pan from the oven (after 10 minutes) and pour filling mixture over the base and smooth over surface. If using jam, spread jam over surface. Add pecans to the empty food processor and pulse lightly. Add remaining topping ingredients and pulse lightly. Crumble mixture over the baking pan. Bake for 15-22 minutes. 3. Combine topping ingredients (melt and then add vanilla) and melt in the microwave in 30 second intervals until melted. Add vanilla. Drizzle over the cooked bars. Allow to cool completely, then refrigerate for at least 2-4 hours. Slice bars and store in the freezer. Enjoy! Bonus: Extra melted chocolate can easily turn dried fruit into delicious quick snacks. Add spoonfuls to a sheet of parchment paper and drop a piece of dried fruit in the center. Top with kosher salt. Allow to harden. Store in the freezer for a delicious treat!
