Pazhampori or Ethayka Appam is a snack made from ripe plantain in Kerala. This is one of the most loved snacks among Malayalis to try with spicy beef roast or beef curry. We are not trying it with beef roast, but with onion roast. Here we are trying banana fritters with onion roast. Pazhampori is a traditional Kerala recipe which is mostly taken as a snack or with different curry combinations. When I tried cooking it, I made a spicy curry with fried onions and tomatoes as an accompaniment to it. No doubt, the curry turned out to be much spicier than what I wanted. But the combination of hot curry with sweet and crispy pazhampori was simply superb. Ingredients for pazhampori: Sweet ripe plantains Semolina Wheat flour or refined wheat flour Sesame seeds (optional) Sugar Pinch of salt How to make pazhampori? For making the batter for pazhampori, we need to first mix semolina and refined flour. Add a few spoons of sugar and a pinch of salt too to it. Add water and blend the mixture very well. Sesame seeds can also be added to the batter. (We can put a pinch of baking soda too, if we want the fritters to be extra crispy) Keep aside the batter for some time. Slice the plantains into long and thin slices. Dip the pieces in the batter. Heat coconut oil or any other cooking oil in a pan. When the oil is very hot, add the plantains dipped in batter one by one. Flip it both sides and fry well. Ingredients for onion roast: Onions (long thin slices) Tomatoes (medium sized pieces) Mustard seeds Curry leaves Garlic Meat masala Chili powder Turmeric powder Green chilies How to make onion roast? Heat oil in a pan. Add mustard seeds and curry leaves to it. When the mustard sputters, we can add a few garlic cloves. As per your choice, you can add garlic as such, or crush or slice them. When the garlic pieces are sauteed well, add sliced onions to it. After adding onions, saute for a while, till the onions turn brown. For making the process faster, add a pinch of salt to the onions. Once the onions are sauteed well, it is time to add the masala mix. Add a few spoons of chili powder, turmeric powder, and meat masala powder to the onions. Saute for a few minutes and pour water over the mixture. Add green chilies too. Water should be according to how much gravy we want for the curry. When the masala mixture has cooked well, we can add tomatoes to it. Again keep it covered and cook for more time. Ne need to cook it so much that the tomatoes melt in the gravy. Turn off the flame when tomatoes are cooked enough. A spicy and easy-to-cook curry to go with pazhampori is ready.
