For the grand finale of my “Tea Inspired Sweets” series are these London Fog cake bars. It consists of an Earl Grey tea cake with a lavender infused whipped white chocolate ganache! If you are a fan of a London Fog latte, then these are a must try! • • • #fyp #cake #food #baking #recipes #cooking #foryou #homemade _____________________________ ⭐️•Makes 1 Dozen Cake Bars•⭐️ • • • 🪻•Lavender Ganache•🪻 ➡️ 3/4 Cup (135g) White Chocolate ➡️ 1 Cup (250mL) Heavy Cream ➡️ 2 Tablespoons Loose Lavender Tea ➡️ Pinch Of Salt ➡️ 2 Tablespoons (31mL) Blackberry Purée (OPTIONAL) ☕️•Earl Grey Cake•☕️ ➡️ 1 Tablespoon Ground Earl Grey Tea ➡️ 1 1/4 Teaspoons Vanilla Extract ➡️ 6 Tablespoons (86g) Softened Butter ➡️ 2/3 Cup (133g) Sugar ➡️ 1/4 Cup (63mL) Canola Oil ➡️ 2 Eggs ➡️ 1/4 Cup (63g) Greek Yogurt ➡️ 1/2 Cup (125mL) Milk ➡️ 1 2/3 Cups (200g) Flour ➡️ 1 Teaspoon Baking Powder ➡️ 1/2 Teaspoon Baking Soda ➡️ 1/4 Teaspoon Salt • • • ⭐️NOTE: When infusing the cream with the lavender, after 10 minutes just be sure to taste to check if there’s enough flavour. If you don’t taste it, allow it to steep longer. Reheat if needed before you pour it over the chocolate. • • • 1️⃣. To make the ganache, mix together the heavy cream and lavender tea in a pot then allow to steep on very low heat for at least 10 minutes. Over a sieve, pour this over the white chocolate then allow to sit for 1 minute before mixing until smooth. Finish it off with the salt and blackberry purée if you decide to use it. Over with plastic wrap and chill for at least 4 hours. 2️⃣. For the cake, cream the softened butter, sugar, vanilla and ground Earl grey tea for 7 minutes. Add the eggs, canola oil and greek yogurt and whip until fluffy. In a separate bowl, sift the flour, baking powder, baking soda, and salt. Alternate between adding the dry ingredients and wet ingredients until you have a smooth batter. Pipe into a rectangular silicon mould and bake at 350 Fahrenheit for 15-20 minutes. Allow to cool. 3️⃣. Whip the chilled ganache for 1-2 minutes until fluffy, then pipe this overtop of the cake bars. Enjoy! _________________________ 🍽•Extra Tips & Advice•🍽 ➡️ Allowing the lavender to steep in the cream takes time, but it’s important to taste to see if the flavour comes through, if not, then steep it longer. ➡️ Using the ground Earl grey leaves ensures you get a nice even flavour throughout the cakes. ➡️ Be careful not to overwhip the ganache.
