Preheat the oven to 360 F (180 C) Line two baking sheets. 3. Place wet ingredients (eggs, coconut oil, maple syrup, vanilla, applesauce) and salt in a large bowl and mix until well combined. 4. Add dry ingredients. Stir to combine. 5. Add chocolate chips, nuts, dried fruits. 6. Scoop the cookies with a cookie scoop or tablespoon, placing about 2 tablespoons of cookie dough per cookie. Slightly flatten and shape the cookies (they will not change during baking). 7. Bake the cookies for 15-20 minutes, or until lightly golden on the edges. Cool completely on a rack. 8. Store in an airtight contianer for up to 3 days.
