Ingredients
* 1 1/2 cups quick oats
* 3/4 cup rolled oats
* 1 cup oat flour (just process rolled oats until finely ground) OR use whole wheat flour
* 1/4 cup ground flax seeds OR chia seeds
* 2 teaspoons cinnamon
* 1 teaspoon baking powder
* 1/4 teaspoon salt
* 1/2 cup applesauce
* 1/2 cup maple syrup
* 4 tablespoons melted coconut oil OR butter
* 2 large eggs
* 1 teaspoon vanilla extract
Add inns:
* 1/2 cup chocolate chips (optional)
* 1/2 cup chopped dates or any dried fruits (optional)
* 1/2 cup chopped walnuts (optional)
Instructions
1. Preheat the oven to 360 F (180 C) Line two baking sheets.
3. Place wet ingredients (eggs, coconut oil, maple syrup, vanilla, applesauce) and salt in a large bowl and mix until well combined.
4. Add dry ingredients. Stir to combine.
5. Add chocolate chips, nuts, dried fruits.
6. Scoop the cookies with a cookie scoop or tablespoon, placing about 2 tablespoons of cookie dough per cookie. Slightly flatten and shape the cookies (they will not change during baking).
7. Bake the cookies for 15-20 minutes, or until lightly golden on the edges. Cool completely on a rack.
8. Store in an airtight contianer for up to 3 days.
