✨ingredients
🥚egg salad:
▪️6 hard-boiled eggs
▪️2-3 tbsp finely diced red onion
▪️1 tbsp finely chopped pickles or capers
▪️1 celery, finely diced
▪️1 small avocado, chopped
▪️vegan mayo [can sub with dairy-free Greek-style yogurt (regular works too), hummus or avocado oil mayo]
▪️ fresh dill + fresh parsley + fresh chives
▪️dijon mustard + lemon juice + salt + black pepper
✨Peel and dice hard-boiled eggs (to desired chunkiness).
✨Add everything to a bowl and mix together.
✨Serve or store in the fridge in an airtight container (for up to 3 days) to add to salads, lettuce wraps and sandwiches.
🥪sandwich:
▪️bread of choice, toasted (we like bread srsly, awg bakery, california country gal or base culture for gluten-free)
▪️dairy-free butter (miyokos or regular works too)
